ONE takes the precision and craftsmanship Mcusta Zanmai is known for and adds something a little different: customization.
Instead of choosing a finished knife straight off the shelf, ONE gives you the opportunity to build your knife around your own preferences. Different blade options, steels and handle combinations can be brought together to create something that feels a little more personal.
And underneath it all is the same Mcusta approach we’ve loved for years. Precision manufacturing from Seki City, carefully selected Japanese steels, and the clean, considered construction that has made Zanmai a favourite here at the shop.

For us, that personal element is what makes ONE interesting.
We’ve carried Mcusta Zanmai for a long time. In fact, we were the first shop in Canada to bring the brand in, and after all these years, it’s still exciting to see where they take the idea of a Japanese kitchen knife.

Now available at KNIFE, the ONE collection takes Mcusta Zanmai’s precision-made approach to Japanese kitchen knives and turns it into a more customizable experience. Rather than choosing one predetermined combination, you can build a knife around your own preferences.
Choose the blade. Choose the steel. Choose the handle. Make it yours.
Start with the shape
The first decision is the knife itself.
ONE is available in two different blade styles so you can start with the shape that fits the way you cook. Whether you gravitate towards a versatile petty or a longer gyuto, the idea is to start with the knife you actually want to use.

From there, the fun begins.

Choose your steel
Mcusta offers ONE with a range of Japanese steels, each bringing its own character to the knife.

For those looking for a straightforward, highly practical option, there are VG10 blades. VG10 is a familiar favourite for good reason, offering a combination of edge retention, toughness and corrosion resistance that works extremely well in a kitchen knife.
Then there is Ginsan a stainless steel particularly appreciated by knife enthusiasts for its fine grain, clean cutting feel and ability to take a very keen edge.
For something a little more visually distinctive, the ONE collection also includes 33-layer VG10, bringing a layered Damascus-style construction to the blade.
And for those who want to go a little deeper, there are more specialized options such as STRIX and V-Toku steel (available with the Zanmai day limited edition knives) each offering its own balance of hardness, edge performance and character.
The steel becomes part of the personality of the knife.
Choose your handle
Then there’s the part you spend the most time with: the handle.
ONE allows you to choose from different handle materials and finishes, giving you another way to personalize the knife. This isn't just about how the knife looks sitting on a magnetic rack. The handle changes how the knife feels in your hand, how it balances, and how naturally it becomes part of your everyday cooking.

You can go understated and classic, or choose something with a little more visual character.
