In our travels in Japan, there is no shortage of fantastic coffee. We stumbled upon Suzuki's cafe on a random day and fell in love with his clean, clear approach from the first moment we walked in.

Hermanos Valso

The sweet, refreshing flavor of red apple and the sweetness of brown sugar. Its clean acidity and transparent taste are reminiscent of candy. A coffee with a pleasant, bright finish that lingers in the mouth.

Hermanos Valso is a small, family-owned mill established in 2017. It is located in Tarrazú, which is said to have the best terroir in Costa Rica.

They started producing coffee 20 years ago, and initially sold cherries to nearby agricultural cooperatives.

However, seeing neighboring farmers and friends establishing their own mills and buyers from consumer countries visiting one after another to trade high-quality coffee at high prices, they decided to establish their own micromill. They wanted to improve quality and add value through their own efforts.

At the time of its establishment, there was no electricity, so they couldn't produce coffee of a quality that could be immediately sold, both technically and in terms of equipment. However, they honestly faced each challenge and improved quality, steadily gaining trust from many buyers. In addition to Catuai, which has been grown since the beginning of the farm, they are also cultivating new varieties such as Millenio (H10).

We sample it every year, but this year the quality was particularly good.
