Chire Natural
A dense sweetness like blackberries.
This lot is produced by Nigussie Gemeda, who won the 2020 Cup of Excellence. The Chire washing station is the largest production facility owned by him. He sets strict quality standards and instructs harvesters to carefully hand-pick only fully ripe cherries and collect them promptly. By deepening local small-scale producers' understanding of quality, he is improving quality levels year by year.
This natural process is carried out carefully to prevent a sudden drop in moisture content. It is dried in the sun in the mornings, and then covered and shaded in the afternoons when the sun is strong, repeating this process for 16-18 days until it is fully dried.
The slow drying process helps to preserve its quality.
The producing area, Sidama, has seen many top placings in recent COE competitions, leading roasters from all over the world to eagerly purchase its beans. It is currently the most highly-regarded area.
