We bought our current farm in 2014, planted Pacas seeds the following year, and started micro lots for specialty coffee in 2019. The carefully harvested cherries are transported to a temporary wet mill at home, where the pulp is removed every afternoon, and the parchment is placed in a fermentation tank for dry fermentation for 20 to 22 hours. The parchment is then washed four times with plenty of water and left to dry on African beds for about 12 days. During drying, the parchment is manually sorted to remove defective beans.
