We're very happy to introduce a new roaster to KNIFE, Native Coffee Company from Dallas, Texas.
Origin roasted coffee project.
Our menu features a curation of the greatest coffees in the world, provided by the greatest producers in the world.
Connecting consumers to origin– like never before.
Native Coffee Company is a producer-led specialty coffee roastery built around a simple idea: challenge the ordinary. Rather than treating producers as suppliers, we build long-term partnerships with some of the world's most innovative coffee growers, including Diego Bermudez and the HACHI Project. We roast at origin in Colombia and Panama, giving producers direct input into how their coffees are presented while sharing 10% of our roasted coffee profits back with them.
Our approach is rooted in freshness, science, and respect for the coffee itself. By roasting close to where the coffee is grown, we're able to work with exceptionally fresh harvests while preserving the vibrant aromatics and natural character of each lot. Many of our coffees showcase advanced processing techniques such as controlled anaerobic fermentation and thermal shock, where naturally occurring aromatic compounds within the coffee are carefully developed and retained—never through artificial flavorings or co-fermentation.
More than selling coffee, we aim to reshape how specialty coffee is experienced. We believe the producer should be the star of the story, that great roasting should elevate rather than overshadow exceptional green coffee, and that every cup should reflect both innovation and origin. Our mission is to create remarkable coffees while helping build a more transparent, sustainable, and producer-first coffee industry.
