Nakayama Awesedo Natural Whetsones (Set of 4)

For those who appreciate the depth and character of Japanese hand sharpening, Nakayama Awasedo natural whetstones have arrived at KNIFE.

Quarried in Japan, each stone is completely unique, with its own hardness, particle structure, and feel. Unlike synthetic stones, which are engineered for consistency, natural stones develop a rich slurry as you sharpen, allowing the abrasiveness to evolve throughout the session. The result is exceptional tactile feedback, refined edge quality, and the soft, misty kasumi finish that has made Japanese natural stones so highly regarded among sharpeners.

The history: 

In the late Heian period (the 12th century), a man named Honma from Kyoto presented high quality natural finishing whetstones, which he had dug out from the mountains, to Emperor Toba. Due to their unique characteristics and performance, which could endow Japanese swords with excellent sharpness and a beautiful appearance, these whetstones became strategic resources of the government and were strictly controlled. The Honma family was enfeoffed at the 'Headmasters of Japanese Whetstone Craftsmen,' and the Kyoto Natural Finishing Whetstone Mine was exclusively operated by the Honma family. 

Among natural whetstones produced in Kyoto, the Nakayama Mine yields those of the highest quality. Because it was operated by the Honma family, it was also called 'Honzan.' After the Meiji Restoration, Kato took over the mining rights from the Honma family, so today the Nakayama Mine is also known as the Kato Mine.

There is no single "best" natural stone. Each one has its own personality, rewarding time, patience, and technique.
