Zanmai Day 2026 Limited Edition Coreless Gyuto 210mm

$520

Description

Mcusta Zanmai is a subset of Marusho Industry Inc. and, to this day, is a family business. The current president, Tomohiro Hasegawa took over from his father recently and together they have been at the forefront of modernizing Japanese knife making with the latest machines and modern material while maintaining age-old Japanese traditions. Their knives are laser-cut, hand assembled and hand finished to ensure near perfection.
As the Elder Hasegawa-San puts it, "...our master craftsmen infuse all our products with the pride and traditions inherited from centuries of Japanese blade makers"

In September 2026 we were lucky enough to welcome Tomo to the shop for our annual Zanmai day.

These knives are wysiwyg (what you see is what you get) - only one piece available per knife.

Mcusta ONE

A new limited edition from Mcusta, the ONE line brings together everything we’ve come to appreciate about this small workshop in Seki City. Clean lines, thoughtful proportions, and an almost obsessive attention to detail.

Each knife is made in Japan with Mcusta’s distinctive approach to construction, combining traditional Japanese craftsmanship with modern materials and precision manufacturing. The result is a knife that feels considered in the hand and quietly refined in every detail.

The ONE is a limited run, made in small quantities and available for a short time. For those who have followed Mcusta over the years, this is a particularly nice one to add to the collection.

Coreless VG2 + VG10

This knife uses a coreless construction of VG2 and VG10, combining two of Japan’s well-known stainless steels in a layered blade.

VG10 forms the cutting core, valued for its excellent edge retention, corrosion resistance, and ability to take a very keen edge. VG2 makes up the surrounding layers, contributing toughness and creating the distinctive layered appearance of the blade.

The coreless construction is a beautiful example of Mcusta’s approach to modern Japanese knife making. Precision manufacturing meets traditional layered steel, resulting in a blade that performs exceptionally well while carrying a little more visual character.
