Mcusta Zanmai is a subset of Marusho Industry Inc. and, to this day, is a family business. The current president, Tomohiro Hasegawa took over from his father and together they have been at the forefront of modernizing Japanese knife making with the latest machines and modern material while maintaining age-old Japanese traditions. Their knives are laser-cut, hand assembled and hand finished to ensure near perfection.

This boning knife is awesome.  Rigid and tough handle is always a must in a good butchery blade.  Easy to clean, stainless and just the right amount of curve make this a great go-to boning knife.
