Meet KNIFE Coffee, our first signature coffees — crafted in collaboration with our good friends at September Coffee in Ottawa, Ontario. We’ve teamed up to bring you small-batch coffee that’s as intentional and precise as the knives we stand behind.
Each lot is sourced from dedicated farmers and producers, then roasted by September to highlight clean sweetness, layered clarity, and a finish that lingers — never bitter, always honest.
It’s coffee for early mornings in the kitchen, slow afternoons at home, or that quiet moment before service starts. Nothing too fancy — just good beans, good roasting, and good people behind it.

Henry Bonilla Murcia
This is our first time working with a coffee from Henry Bonilla Murcia and we're proud to share this memorable and sweet Sudan Rume. In this cup we get stone fruits, juicy citrus, and sweet berries like blackberry and strawberry.
In the cup we taste juicy sweetness of fruits reminiscent of strawberry-kiwi and sparkling citrus that reminds us of lemon and tangerines. This coffee has a sparkling citric acidity and a silky body with a long sweet finish.
Process
The selected cherries undergo a minimum of 72 hours of oxidation. They are then fermented in blue tanks for 24 hours before transitioning to drying beds. The seeds are rotated and dried for 20 days to ensure consistency. Like all natural coffees, the entire mucilage of the coffee cherry remains around seed as it goes through each processing stage.
