Meet KNIFE Coffee, our first signature coffees — crafted in collaboration with Townsfolk coffee from Kanazawa,Japan. We’ve teamed up to bring you small-batch coffee that’s as intentional and precise as the knives we stand behind.
Each lot is sourced from dedicated farmers and producers, then roasted by Shichiniro of Townsfolk to highlight clean sweetness, layered clarity, and a finish that lingers — never bitter, always honest.
It’s coffee for early mornings in the kitchen, slow afternoons at home, or that quiet moment before service starts. Nothing too fancy — just good beans, good roasting, and good people behind it.

Sitio de Torre
It has a moist sweetness reminiscent of hazelnuts and chocolate, and as the temperature drops, it also has a dried cherry flavor.
This is a coffee that is recommended for when you want to sip slowly.
City Odatore is a farm that has been featured many times on townsfolk coffee. It is located in the Mantiqueira Mountains at an altitude of 1,100-1,300m in the prime production area of Carmo de Minas.
This batch is a naturally processed Yellow Bourbon. While it typically has a rich sweetness, this year's batch boasts an even cleaner finish.
In addition to carefully selecting and managing the cherries, efforts such as resting the cherries in wooden silos for more than 30 days to bring out the vibrant flavor unique to Carmo de Minas lead to the production of consistent quality.
With an impressive track record of 29 Brazil COE awards, this farm is truly one of the top farms in Brazil.
