Meet KNIFE Coffee, our first signature coffees — crafted in collaboration with Townsfolk coffee from Kanazawa,Japan. We’ve teamed up to bring you small-batch coffee that’s as intentional and precise as the knives we stand behind.
Each lot is sourced from dedicated farmers and producers, then roasted by Shichiniro of Townsfolk to highlight clean sweetness, layered clarity, and a finish that lingers — never bitter, always honest.
It’s coffee for early mornings in the kitchen, slow afternoons at home, or that quiet moment before service starts. Nothing too fancy — just good beans, good roasting, and good people behind it.

Serra das Tres Barras
A coffee with an almond chocolate-like flavor and sweetness, and a pleasant mouthfeel. It also has a dried fruit flavor, like prunes.
This farm was also available at the end of last year, but this lot is of the Yellow Arara variety.
It is a hybrid variety created through natural cross-pollination between Yellow Catuai and Obata.
It has been verified to be excellent in quality and yield, and resistant to pests and diseases, and the number of farms cultivating it in Brazil has been increasing recently. It has also won awards in the Cup of Excellence.
Carmo de Minas in the southern part of Minas Gerais state, where the Serra das Tres Barras farm is located, has an altitude of 1000m to 1450m, as well as a suitable climate and abundant rainfall for cultivating high-quality coffee.
The producers, the Junqueira Family, are highly professional and spare no effort in selecting varieties, cultivation methods, and researching harvesting and processing.
They have repeatedly installed new green separators (green bean sorters) and suspended patios, and continue to stably produce bright, flavorful, and clean-tasting coffee.
The farm has won numerous awards at the BSCA (Brazil Specialty Coffee Association) and local competitions hosted by the state of Gerais, earning high praise.
