Description

Made for us by Hatsukokoro - a ginsan deba. Rare as it is, we love a stainless deba.

This Deba is fantastic. Weighty - just the thing needed for those fish bones.

The Deba knife is a traditional Japanese kitchen tool designed for precision and strength. With its thick, single-beveled blade, it excels at cutting through fish, poultry, and other proteins with ease. Ideal for filleting and butchering, the Deba knife offers exceptional control and durability, making it a must-have for both professional chefs and home cooks. Its sharp edge and sturdy construction ensure clean cuts and minimal wastage, delivering outstanding performance in any kitchen.

Hatsukokoro is a brand unlike many others.

Based in Amagasaki, Japan, this company works with a network of highly skilled blacksmiths, sharpeners, and other traditional artisans to produce some of the best knives on the market.

Established in 2013, H&K Co. Ltd. began as a distributor of some of Japan's finest products with the goal of bridging the gap between Japan and the rest of the world.

The name Hatsukokoro was inspired by a Japanese proverb meaning 'don't forget your original intention.'

The blacksmith of this knife is not disclosed by Hatsukokoro.

But has been confirmed, sharpened and grinded by a member of Myojin Riki Seisakusho hamono.

This is an incredible knife, unique for sure.
