This beautiful line of knives is made with Ginsan stainless steel for high performance and easy maintenance. Known for its high carbon content while still remaining fully stainless, Ginsan is quickly becoming one of our favourite steels here at KNIFE. Ginsan has the ability to take on a razor sharp edge and is a joy to sharpen.
Yoshihiro Yauji is a young blacksmith working out of Takefu knife village. Part of new wave of young talented artisans that do so, Yauji-san is one of the few smiths that also polish, sharpen and finish his own steel. We are very big fans of Yauji-san's Shirokami #2 line of knives and are excited to see something new from this incredibly talented blacksmith.
The Ginyo line from Yauji-san has a very subtle Tsuchime and Damascus finish and must be seen in person to be appreciated.
Please note, this recent batch of Ginyo's does not have a Tsuchime finish.
