FINETIME Coffee Roasters
Owned and operated by Takeshi Kondo, this small cafe and roastery has been serving up specialty light roast coffee in Kyodo, Setagaya-ku, Tokyo, since 2016.
We roast the highest quality raw beans in a way that brings out the original characteristics of the beans. Experience a new coffee taste with a clean acidity and sweetness like fruit.
We purchase from micromill producers in Central America and from Nordic Approach in South America and Africa. Enjoy a variety of specialty coffees that vary depending on the season.
We use a Diedrich 5kg roaster to bring out the fruity flavor without the bitterness that coffee originally has. We record the roasting profile daily and always strive to roast consistently.
Owner Takeshi is a certified coffee master and Q grader, and won third place in the 2016 Japan Aeropress Championship. We will also give you advice on how to brew, so please feel free to ask us.
Sumava
Sumava Farm is a renowned farm that won first place in the Cup of Excellence (COE) in 2016. Working in collaboration with the exporter Exclusive, they continuously experiment with various processing methods and varieties to produce high-quality coffee. The Black Moon Kenya featured here is a micro-lot using only Kenyan cherries that ripened during the new moon. The cherries are placed in plastic baskets and left to rest in the shade for four days. The parchment is then fermented in a tank for 24 hours, after which the mucilage is removed using a machine called a Desmusira Hinadora. This processing method combines traditional natural and washed techniques, resulting in a clean, bright Kenyan coffee with orange acidity and a long-lasting sweetness of dark cherry and berry.
