Tsunehisa (previously Akifusa) knives are some of the cleanest and lightest knives we carry in house. These newer SLD knives are feeling great.
A touch on the weightier side (for Tsunehisa) SLD steel is a great long lasting steel to work with. Based on SKD-11 (a common steel here at KNIFE) Hitachi steel works in Japan recently fine tuned the combination of alloys to come up with a nice longer wearing and stain resistant metal. Originally used in tool and die stamping, this steel has found its way into kitchen knives thankfully.
Zoom in close to check out that gorgeous micro grain structure. Not to be mistaken for damascus. Those patterns are the actual carbides that run along the steel to harden and strengthen the steel. We're out here living in future!
