Murata knives are made by Blacksmith Takeo Murata in Kochi Japan.
He uses high grade Aogami Super in these handmade knives. The Kurouchi finish helps protect the carbon steel from oxidization but needs to be kept dry and clean regardless. The 61-63 HRC makes for great edge retention.
These knives are sold under the name Buho - this is Takeo's chosen artist name.
Due to the reactive nature of carbon steel. Please remember to wash and dry after each use to prevent oxidation.
Please note, the tips on these knives are ground off at an angle. This is intentional.
A funayuki originated as a fisherman's knife. Slightly more elongated and thinner than a traditional Gyuto shape. A funayuki has been known to double as a fish butchering knife, but has been adopted by many as an all arounder. For those who like a slicer style cut with their Gyuto - this may be the knife for you.
