Representative, Blacksmith

Made with Shirokami #1 carbon steel and beautiful Keyaki wood handles.
Ground thin behind the edge with a consistent, even taper, these knives move cleanly through product with minimal resistance. The profile supports precise, controlled cuts—favouring push and pull techniques over rocking.
This is a knife that rewards good technique. Best suited to experienced home cooks and professionals who value precision, feedback, and edge performance. Not intended as an entry-level knife.
Due to the hardness and thin geometry, proper use is essential. Avoid twisting cuts, hard contact, or frozen product. Pair with a soft cutting surface and regular maintenance to preserve performance.
Please note, while sold as a 150mm the blade measures closer to 155mm and may vary from knife to knife.
