On a recent trip to Barcelona and after countless cups of coffee, I stumbled upon a classic old cafe in the gothic quarter of the city. I can't remember the name but I remember how incredible that coffee tasted. It's no secret that we here love an incredible pour over with our classic V60 / Cafec filters, but Sibarist is changing the game.

The goal of Sibarist was to create a unique filter with an outstanding flow rate using the best possible materials, and boy did they deliver.
Sibarist has developed a tool that allows the coffee community to reinvent their recipes and achieve new and different cup profiles. These filters facilitate the best experimentation in search for the best possible extraction.

Sibarist FAST Coffee Filters boast a special technology that features a unique fibre composition, which provides an unprecedented 'drawdown' circulation of liquid through its structure. This offers a fast, constant flow in extractions while retaining the solid, non-soluble particles. The results are a clean, silky cup of coffee, free from external flavours.

UFO Special Edition - FAST
The UFO Special Editions are the filters that perform the maximum potential, yield and fitting of the UFO dripper. The filters ensure the no bypass but let extraction be driven through the UFO original air channels design, achieving a special and stunning cup profile.
The UFO dripper is a Jay and Kenzie development; they based all the R&D to create the UFO around the Sibarist filters due to the consistent performance every single time. The UFO special edition goal is to share the utmost consistent brewing experience with the brewing community.
From Jay, 'We wanted to create a conical dripper that can not only capture clarity and complexity, which are characteristics of a traditional 60-degree wall angle conical dripper but also sweetness and even extraction of a flat bottom dripper, leading to cups with incredible clarity and intensity. Once we achieved that through the UFO's unique 80-degree wall angle, our next mission was to solve the consistency issue of a conical dripper. That's when we designed our UFO air channels alongside UFO blocks that the filters sit on with enough surface tension to not collapse into the air channels. The result is something truly special, a cup profile that has never existed before. One that combines the best of the flat bottom and the conical geometry.
