Reboot Coffeebar is a specialty light roast coffee shop located in the Chuo Ginza shopping district of Takasaki City, Gunma Prefecture, Japan.
Reboot is run by our new friend Toshiki. It is here in his little cafe that his passion and dedication comes through with each bean roasted and served. We found him through our family in Japan.
Always in search of not only the best coffee in the world, but the most passion driven and dedicated individuals that continue to push this industry further and further with their hard work.
The coffee is roasted and extracted under the theme of 'coffee as a luxury item' and is not bitter or smoky, allowing you to enjoy the fruity and wonderful flavor inherent to high-quality specialty coffee.
REBOOT
Takasaki Chuo Shopping Street, where Reboot Coffeebar is located, once flourished as the center of Takasaki.
However, although it is currently one of the prefecture's most lively entertainment districts at night, it is quiet during the day and is known as a shuttered district.
We hope that young people will once again gather in this shopping district and bring it back to life.
With this in mind, we named our store REBOOT.

Finca Milan
Finca Milán, located in the hills near Pereira in Risaralda Department in central Colombia, is an ideal coffee-growing region blessed with fertile volcanic soil and a large temperature difference between day and night. Located at an altitude of 1,400-1,800m, the approximately 60-hectare farm cultivates a variety of varieties, including Geisha, Castillo, Bourbon, Catiope, and Pink Bourbon.
The farm is led by Julio Madrid of the Madrid family and young producer Andres Quiceno (of Cafe Uba). While maintaining traditional farm management, they have also actively pursued research and development and innovative processing techniques. Andres has established a dedicated on-site laboratory, where he experiments with new fermentation methods daily, producing unique batches that are worthy of global market recognition.
Furthermore, the farm's activities extend beyond coffee production; it also emphasizes coexistence with nature. The property features a protected spring watershed and a bamboo forest corridor to maintain biodiversity, balancing coffee cultivation with the conservation of the natural environment.
NIU Process
NIU Culturing refers to a fermentation approach where “NIU,” meaning coconut in Hawaiian, is incorporated into a controlled culturing process.
In this method, specific microorganisms or cultured substrates are introduced during fermentation to create distinctive and stable flavor characteristics.
When combined with coconut-derived elements, the process aims to emphasize sweet, creamy, and tropical notes in the final cup.
