LULO Coffee - Inspired by Place, Driven by People
Founded in 2020 and based in Ottawa, we roast, deliver and brew delectable specialty coffee directly from friends in Costa Rica + Colombia.
The company came to life through connections formed naturally through travel and adventure.
Those connections are the heart and soul of LULO and we aim to pass a little of the adventure on in each coffee and cup we serve.
We're passionate about quality - importing each coffee fresh from the farm and roasting in small, precise batches.
We believe that the best coffees come from a supply chain in which everyone is stoked to be a part of it, and we are happy to offer you just that.
LULO breaks down their roasts into three distinct series: Peaks, Pillars, and Bedrock.
The Peaks Series is fun, fruity, and floral. Peaks are the coffees that make cups sparkle.
Coming from the very same farms (sometimes varieties) as the Pillar coffees, Peaks are where the talented people we work with really find their style and expression with bespoke varieties and nuanced, thorough processing.
So come on, the view is nice from the Peak.
The "Perry Process" is courtesy of a knowledge exchange that occurred when Perry (Selva Coffee) was visiting Ronaldo (Disruptiva) on his family farm in Boyaca, Colombia. He commented that piling the coffee in little mounds on the patio helps add complexity through additional atmospheric oxidization. Ronaldo being Ronaldo, he went ahead and added the Disruptiva touch:
First, the fruit is picked at peak ripeness and rinsed. It's then fermented in grainpro bags for four days. It's then pulped with almost no water for a full honey process, before being left in an open ceramic tank overnight. After that rest period, it's set into these cute little mounds on the concrete patio for two days before being levelled out to dry. Drying takes an average of 12 days.
Another thing about this coffee that makes it so special. The variety, Catuai, is truly not often found in Colombia. In Boyaca, there was a widespread proliferation of Costa Rican varieties such as Catuai and Costa Rica 95 in the early 2000's. While Castillo is becoming evermore common, there are still plenty of farms with these varieties planted.
