FINETIME Coffee Roasters
Owned and operated by Takeshi Kondo, this small cafe and roastery has been serving up specialty lightroast coffee in Kyodo, Setagaya-ku, Tokyo, since 2016.
We roast the highest quality raw beans in a way that brings out the original characteristics of the beans. Experience a new coffee taste with a clean acidity and sweetness like fruit.
We purchase from micromill producers in Central America and from Nordic Approach in South America and Africa. Enjoy a variety of specialty coffees that vary depending on the season.
We use a Diedrich 5kg roaster to bring out the fruity flavor without the bitterness that coffee originally has. We record the roasting profile daily and always strive to roast consistently.
Owner Takeshi is a certified coffee master and Q grader, and won third place in the 2016 Japan Aeropress Championship. We will also give you advice on how to brew, so please feel free to ask us.
Buenos Aires
Buenos Aires Farm has been operating in Huila, Colombia's most advanced coffee producing region and home to numerous COEs, for over 20 years, specializing in the country's rare natural process. This coffee is refined using a special method called Thermal Shock Natural, using the rare Sudanlume variety, which was previously used by a World Barista Championship (WBC) champion. The coffee is washed in warm water at approximately 50°C to loosen the molecular structure and prepare it for fermentation, followed by anaerobic fermentation, resulting in a wonderful tropical flavour. This coffee offers a variety of fruity notes, including strawberry, raspberry, mango, melon, grapes, and dates.
