For the first time at KNIFE, we are very happy to introduce beans from évery in Vaughn, Ontario.

'My fascination with the specialty coffee industry led me to embark on journeys to coffee-producing countries such as Ecuador, Costa Rica and Brazil and engage directly with coffee farmers and producers. It was a profound revelation to witness the significance of coffee production within the agriculture communities and our planet. This is why we uphold our values of sustainability and transparency and seek to preserve the traditions of these communities by passing them on to you.'

Grown in the highlands of Central Kenya, this coffee is the result of hundreds of passionate smallholder farmers working together through local washing stations. In this region, cool temperatures, rich red volcanic soil, and steady rainfall create ideal conditions for producing coffees with remarkable clarity and vibrancy.

Cultivated at around 1700 meters above sea level near the slopes of Mount Kenya, these beans develop slowly, becoming dense and flavour-rich. The lot is composed of classic Kenyan varieties, SL-28, SL-34, Ruiru 11, and Batian, cultivars known for their expressive acidity, structure, and complexity in the cup.

This coffee is fully washed, a meticulous process that enhances its precision and transparency of flavour. After harvesting, the cherries are pulped, fermented, and carefully washed before drying, allowing the intrinsic character of the terroir and varieties to shine. The result is a cup that is bright and lively, with a sweet, lingering finish and beautifully balanced structure.

Produced through Kenya’s cooperative system, this lot represents more than exceptional quality, it reflects a shared commitment to craftsmanship, sustainability, and community. Many of the farmers involved cultivate small plots of land, often under five acres, and rely on collective knowledge, shared resources, and generations of experience to produce coffees of outstanding character.

Kenyan coffees are celebrated worldwide for their unmistakable profiles, often defined by vivid acidity, layered fruit notes, and wine-like elegance. This lot is a beautiful expression of that tradition: vibrant, structured, and deeply rooted in place.
