For the first time at KNIFE, we are very happy to introduce beans from évery in Vaughn, Ontario.
From Denis, the founder of évery:
'My fascination with the specialty coffee industry led me to embark on journeys to coffee-producing countries such as Ecuador, Costa Rica and Brazil and engage directly with coffee farmers and producers. It was a profound revelation to witness the significance of coffee production within the agriculture communities and our planet. This is why we uphold our values of sustainability and transparency and seek to preserve the traditions of these communities by passing them on to you.'
Basha Bekele
Nestled in the highlands of Sidama at 2,100–2,200 meters, Faficho Bombe produces exceptional Natural, Red Honey, and White Honey coffees. Sourced from the Bombe kebele in the Bensa district, the farm and washing station are owned by Basha Bekele, who manages 2.5 hectares of farmland and a 1.5-hectare processing site. Each year, around 500 local farmers contribute cherries, resulting in roughly 500 bags of coffee. Rich clay soils, high altitude, and deep-rooted farming traditions make this region ideal for producing high-quality coffees.
About the Natural Process
The cherries are meticulously processed at the washing station, which for this
natural lot involves density sorting, hand sorting on drying tables, and prolonged
drying under the Ethiopian sun to achieve optimal moisture levels. Once processed,
the coffee is dry-hulled, bagged, and transported to Addis Ababa for milling and
export.
