Prodigal is a specialty coffee roaster based in Boulder, Colorado, led by Scott Rao and Mark Benedetto. Their aim is to provide consistently clean, light roasts through the use of strict QC standard green beans and expert roasting. Green beans are chosen based on a blind cupping, where only the highest scoring are added to their repertoire. Prodigal is also committed to paying some of the highest prices for green beans in the world to support their producers.
This is a special coffee. Last year we purchased Angel Arturo Paz' Honduran COE winner "El Itacayo". We became fast friends with him, and he set out to find more delicious Honduran coffees for Prodigal. Enter Patricio Navarro. Patricio submitted this lot to the Cup Of Excellence this year, and Angel sent us a sample from a small portion held separately from the COE auction. We loved it and snatched it up immediately. In the following weeks of COE tastings, Patricio's coffee rose above and secured 2nd place in the Traditional category! We're lucky to have this coffee ahead of the COE auction which takes place July 16. We're enjoying this coffee's ripe flavors of apricot, green grape, and melon. We even have a few rested bags from our subscription roast!
The cherries were hand harvested at peak ripeness, then rested in sealed bags for three days at the wet mill. After that fermentation, the cherries were pulped and held in bags again for three more days. Then the cherries were washed thoroughly four times, yet a tenacious bit of mucilage remained, therefore this lot is considered "semi-washed". The processing culminated in 18 days of drying on raised beds. Even with these processing steps, this coffee tastes immaculately clean.
