Prodigal is a specialty coffee roaster based in Boulder, Colorado, led by Scott Rao and Mark Benedetto. Their aim is to provide consistently clean, light roasts through the use of strict QC standard green beans and expert roasting. Green beans are chosen based on a blind cupping, where only the highest scoring are added to their repertoire. Prodigal is also committed to paying some of the highest prices for green beans in the world to support their producers.
The pulping of this coffee left approximately 10% mucilage stuck to the seed, a mini-honey if you will. It fermented 24 hours, followed by hand washing and shade drying. As the coffee dried, it was stirred regularly and continually sorted to remove defects.
This lot came from the man seemingly everywhere in Ethiopia - Habtamu Fekadu Aga. The Goro washing station first came online in 2013 and has seven permanent and 100 seasonal workers. Expect to see several more Habtamu coffees on the Prodigal menu this year!
