The Santuario Project is led by Camilo Merizalde, focusing on producing high-quality coffee using special varieties and unique processing methods. This project collaborates with partners in Colombia, Brazil, Mexico, Costa Rica, and other countries, aiming to create unique and exceptional coffee.
About the Process: Red Honey
Harvest only cherries with a Brix level of 24 or higher.
Wash the cherries and soak them in water for 2 hours (soaking process).
Remove 50% of the mucilage.
Conduct a 6-hour aerobic fermentation.
Sun-dry the coffee on African beds for 16 days.
Store the coffee in GrainPro bags for 10 days to stabilize.
Perform cupping for lot selection.
