Welcome to KNIFE.
Fresh, sweet, smooth. Aromas of honey, hazelnut, apple, and apricot.
The Farmer
This is the first coffee we bought directly from the farmer when we first opened our roastery in 2007. Edwin Martinez and his father, Don Edwin Martinez, run their farm in the area of Huehuetenango in the highlands of Guatemala close to the border of Mexico.
The farm is located in a picturesque landscape surrounded by mountains reaching up to 3,400 masl. Here, the washed coffee is dried under the sun rays on the patio.
Through the years, we have exchanged experiences, brought back stories from the farm to our guests, shared feedback from the coffee shops to the coffee farm, talked about quality in picking, sorting and drying and much more.
