Apollon's Gold started as a small home roasting coffee shop in a western suburb of Tokyo, and has since grown and gained worldwide recognition for their incredible bean choice and delicious coffees. They have been featured and represented in some of the best coffee shops in the world and are loved by many enthusiasts.
We met Yoshitatsu (Apollon's head roaster) via email and dms and grew to love his ideal and reasoning of the world of single origin coffees. Their innovative roasting styles and effortless passion for roasting and tasting made going with Apollon's Gold a no-brainer for us here.
All of their coffees are cupped by the roaster and 2 cuppers in Tokyo.

Roasting
We are always aiming to enhance the best possible brightness that we see as the terroir by the roast development. As we used to roast classical espresso coffees (especially blends) in the very beginning, we are trying to bring each coffees's potential sweetness to achieve omni roast. Every single batch is roasted by our roaster/founder, using Coffee SR5 classic drum roaster with a unique profile that is inspired by thousands batches of roasting experience in modern specialty coffee and classic espresso roasting, that especially focuses on drum rolling speed and airflow setting.
Omni roast Profiles
All the coffees we offer can be brewed by any method from filter or espresso! Each origin is roasted in a roast profile with 20-25% development time ratio to enhance sweetness and flavors, that is dedicated to the versatility. We control drum rolling speed and airflow very carefully along with the roast development to achieve our omni roasting.
Apollon's Gold's head roaster Yoshitatsu recommends resting / degassing your coffee sealed in its bag for at least 40 days. Best served at 45 - 60 days post roast date. Good up to 90 days shelf life.

Geisha Wave - Washed
Our favorite Geisha from Pepe is back, and this time with new processing! "Wave" processing comes from temperature surfing from hot to cold during the fermentation process, which leads to unique flavors that only come from this terroir. Pepe prefers to accentuate and boost the inherent flavors of each cultivar and terroir with his coffee, and this "Wave" washing process does just this.
According to Pepe, this year's harvest has matured more as both cherry and green beans, making the coffee harder and denser, and shows in its incredible flavor intensity and complexity.
In this Geisha lot we find perfumed flavors of sweetie (oroblanco citrus), lavender and jasmine, with a sweet strawberry finish.

Tyoxidator - Typica Mejorado Washed
This is our 3rd time purchasing Tyoxidator, one of our favorites from Pepe, and one of his best sellers. Tyoxidator stands for "Typica Mejorado Oxidator" which is his unique and renowned terroir boosting oxidation washing process. This washing process brings out the cultivar's inherent flavors, but gives it unprecedented flavor intensity akin to top level Geishas and auction lot coffees.
This 2024 harvest tastes especially vibrant, out of the last 3 harvests we've purchased.
Expect intense tamarind with perfumed notes of lychee and a very juicy and sweet yellow apple body and finish. The notes may sound underwhelming, but each note is incredibly vibrant and distinct with a perfect body structure.

Sydra New Cultivar - Wave Natural Cultivar
Sydra New Cultivar is the most genetically pure Sydra which is very hard to come by and which very few producers have access to. Using his signature "Wave" washing process, Pepe controlled the fermented flavors he wanted perfectly, accentuating the inherent flavors of the cultivar and his farm's terroir masterfully.
Expect juicy and sweet rambutan (similar to lychee and mangosteen) up front, with spicy and sweet ginger ale notes, and a bright finish of pineapple and pomelo.

Sydra - Oxidation Washed
This is the first release for Syoxidator, which stands for Sydra Oxidator. If you're familiar with Pepe Jijon or us, you've likely seen or tried Tyoxidator, which is Pepe's signature oxidation washing process. It's renowned as a terroir boosting process, and has always been impressive and exceptional with his Typica Mejorado, or Tyoxidator. This time, he tried it with his farm's favorite cultivar, Sydra. To their delight, this process reflected the longer maturing time for this harvest's Sydra, and surprised everyone with an incredibly rich body and even more vibrant flavors than expected.
In the cup we find bright fruity notes of clementine and ginger ale, with a spicy honeysuckle florality, and a sweet melon finish.
