Takamura is a small hamono located in the heart of Takefu, Fukui Japan. Run by third generation blacksmith Terukazu Takamura who inherited the business from his father Toshiyuki Takamura. Takamura knives are mainly constructed using R2 Powdered steel one of our favourite steels here at the shop. R2 powder is known for its long edge retention and easy maintenance. Perfect for long days in a professional kitchen. The Red handled Takamura is one of our best sellers and is so due to its laser thin construction that makes it perfect for dropping through ingredients. Quick daily touch ups with a #2000 grit stone has worked well for us in easy maintenance.
The 180mm Gyuto is a perfect size for a do it all knife. Small enough for fine vegetable work, large enough for bigger prep jobs.
