Variety & Processing

This Caturra variety is picked when the coffee cherries are ripe, placed in clean sacks to ferment for 48 hours, then de-pulped and fermented in tanks for up to 120 hours. The coffee is then thoroughly washed and sorted by hand before drying on raised beds for 20 days. 

Gabriel Narvaez

Gabriel Narvaez has managed Finca El Aguacate with his family for over 15 years. The farm sits at 2285 masl in Arboleda, Nariño, Colombia. They grow additional crops like corn, yucca, and beans to make a living and provide necessary shade for their coffee plants. Gabriel doesn't use chemical fertilizers or herbicides, only organic fertilizer twice a year to aid their plants yield, preserving the soil and environmental conditions on El Aguacate.
