Reboot Coffeebar is a specialty light roast coffee shop located in the Chuo Ginza shopping district of Takasaki City, Gunma Prefecture, Japan.
Reboot is run by our new friend Toshiki. It is here in his little cafe that his passion and dedication comes through with each bean roasted and served. We found him through our family in Japan.
Always in search of not only the best coffee in the world, but the most passion driven and dedicated individuals that continue to push this industry further and further with their hard work.
The coffee is roasted and extracted under the theme of 'coffee as a luxury item' and is not bitter or smoky, allowing you to enjoy the fruity and wonderful flavor inherent to high-quality specialty coffee.
REBOOT
Takasaki Chuo Shopping Street, where Reboot Coffeebar is located, once flourished as the center of Takasaki.
However, although it is currently one of the prefecture's most lively entertainment districts at night, it is quiet during the day and is known as a shuttered district.
We hope that young people will once again gather in this shopping district and bring it back to life.
With this in mind, we named our store REBOOT.

Finca El Paraíso
Paraíso Farm is a renowned coffee farm located in the Cauca region of Colombia. The farm spreads across the highlands of southern Colombia, blessed with rich volcanic soil and a mild climate throughout the year, providing the perfect environment for coffee cultivation. The owner, Diego Samuel Bermudez, is known as an innovator in coffee cultivation and processing. He is committed to improving the quality and diversifying the flavor of coffee, and is actively incorporating advanced fermentation techniques in addition to traditional methods. In particular, processes such as "anaerobic fermentation" and fermentation using yeast are factors that create the unique and complex flavor of El Paraiso Farm's coffee. El Paraiso Farm's coffee is generally characterized by a fruity aroma, vivid acidity, and sweetness. These characteristics are the result of thorough quality control, such as detailed management of the fermentation process and temperature control carried out at the farm. In addition, rare varieties such as Pink Bourbon, Chiloso, and Geisha are also cultivated, mainly Castillo varieties, and the characteristics of each variety are maximized. The coffee produced by this farm is highly regarded in the international specialty coffee market and has won awards in numerous coffee competitions. It is particularly popular with baristas and roasters who seek quality and uniqueness in their coffee, and El Paraiso Farm's coffee is often served as a special cup.
Red Plum
The Red Plum process is based on the theme of red fruits such as plums, and involves two anaerobic fermentations (double anaerobic) and thermal shock washing.
1. With pulp still attached (coffee cherries), anaerobic fermentation twice after removing the pulp.
2. Washing twice with 40°C hot water and 12°C water (thermal shock).
3. Drying for 24 hours in an environment with a temperature of 35°C and a humidity of 25%.
