The Kotetsu line of knives comes to us from Takefu via Hiroshima. Shibata Takayuki, a master sharpener, in partnership with blacksmith Takumi Ikeda create the Kotetsu. Made with R2 Powdered steel, these are some of the thinness and lightest knives in house. Well balanced and stainless make this not only easy to maintain but a workhorse in the kitchen. - "Art over Beauty."

Due to the overwhelming demand of Rosewood and it's slowly diminishing supply, Kotetsu has decided to change all of it's handles to Jarrah wood for the sake of sustainability. This is the first knife in the Kotetsu line to adopt the Jarrah handle, but we will soon see the entire line switched over to Jarrah. Jarrah is an Australian hardwood used primarily in furniture due to its high durability. Jarrah wood is a great choice for a knife handle; durable, anti-microbial and most importantly, sustainable.
