SG2 is one of our favourite stainless steels. This high-grade steel makes for a knife with fantastic edge retention and very easy maintenance.
In Japanese Saihyo means 'diamond dust.' This seems to be the perfect name for these gorgeous suminagashi damascus knives. Suminagashi means 'floating ink' and is a Japanese method of marbling, wherein ink is dropped into water to create beautifully unique patterns. A very fitting name for the damascus patterns on these knives.
