Shyira Washing Station

In addition to being the highest coffee growing area in Rwanda at an altitude of 2,300 masl, the coffee cherries of Nyabihu County, which are produced in a mountain valley covered with deep fog, are world-class for their cup quality, which sets them apart from other areas. 

Shyira Washing Station also operates at an altitude of 1,800 masl. There is a valley with a river flowing below, and the location is exactly like a cliff. Since its inception, Shyira Washing Station has operated on a small scale with a focus on quality over quantity. 

This lot is made from cherries collected from approximately 1,900 small-scale farmers in the area, which are further sorted and purified using a water washing method. 

The coffee cherries brought to the Shyira Washing Station are weighed and placed in a tank where they are separated into unripe cherries and fully heated cherries. The cherries are then pulped and dry fermented in the fermenter for 6-12 hours. After this fermentation, the cherries are sorted by specific gravity in a canal and graded into 8 grades. Wet parchment is then dried on shaded beds and then moved to the hand-picking process. The parchment is then transferred to a table for drying in the sun, where it is stirred every 30 minutes by a staff member to ensure even drying. 

On rainy days and during the hottest part of the day, the parchment is protected with plastic to prevent rapid drying due to strong direct sunlight and uneven drying, such as uneven moisture content due to drying only on the surface. When the moisture content of the parchment reaches 10.5%, it is packed in bags and stored in a warehouse. 

Cupping Comments from Lilo

Slightly sour and sweet taste of juicy mandarin oranges. Refreshing flavours of green apple and pear. Brown sugar's smooth, sweet aftertaste lingers pleasantly. 

Roasted for their Kissa location - this is a gorgeous washed Bourbon from Rwanda. We don't often represent Rwandan coffees here at KNIFE and every time we do, we wonder why we don't share them more often.

Cupping review: refreshing green apple with slight acidic mandarin orange. This is a fruity, yet pleasantly light for a medium roast level, and an easy to drink washed coffee.
