Oroshigane (Oroshi Graters) have been used for centuries and continue to be used by chefs worldwide. The Shark skin used on the grater is the perfect texture for grating wasabi, as copper or metal graters tend to be too coarse. The extra pressure needed to create the fine paste of wasabi releases more aroma and gives a nicer texture to the root. Also great for garlic, ginger, and turmeric.
Do not place in dishwasher as this may weaken the glue binding of the sharkskin.
